Carrot Salad

Salade de Carottes Rapees (Moroccan Grated Carrot Salad)

Serves 4-6

1 pound (500 g) carrots, finely grated

Juice of 1 lemon or more

Salt and pepper

4 tablespoons extra-virgin olive oil (in Morocco they use delicate argan oil)

3 tablespoons chopped flat-leafed parsley or coriander

Dress the carrots with lemon juice, salt, pepper, and olive oil

and mix in the flat-leafed parsley or coriander.

VARIATION:

You may add 2 crushed garlic cloves, the juice of 1 orange, or 1

tablespoon sugar.
