Bruschetta

1 tomato, chopped

1 clove garlic

1 T olive oil

basil

white or Italian bread

Toast/grill the bread until it is crispy (actually, I use homemade

sourdough bread here and it is excellent). Rub the bread with the

cut clove of garlic -- careful, the bread absorbs more garlic than

you expect. Drizzle with olive oil. Top with chopped tomato, then

ample amounts of basil. Goes great with tomato soup!
