Chicken Fried Steak
6 chopped steaksflour
salt
pepper
oil or melted Crisco
2 Tbsp flour
1-1/2 to 2 C milk
salt
pepper
Dredge the steaks in some flour and fry in 1/4" of oil. Salt &
pepper them while they are in the pan. Drain the steaks on paper
towels and drain the pan of all but 1-2 Tbsps of oil. There should
be plenty of crunchies leftover from frying the steaks. Keep these.
They're what make the gravy tasty. Add the flour (1 large tablespoon)
to make a kind of roux. Add the milk gradually until the gravy is
the consistency desired. Add salt & pepper if you feel it's needed.
