APRICOT and GINGER MUFFINS
1 3/4 cups self-raising flour2 to 3 Tbsp castor sugar
1/2 tsp salt
1 slightly beaten egg
1.1/2 tsp ground ginger
3/4 cup milk
1/3 cup melted butter
3/4 cup finely chopped dried apricots
1.1/2 tsp grated lemon peel
1 tsp baking powder
Preheat oven to 400F, prepare pans. In a large bowol sift together,
flour, sugar, baking powder, salt and ginger. Combine egg, milk,
melted butter, grated peel and chopped apricots. Add dry mix to
wet mix until just combined. Spoon into pans and bake for 20-25
mins. Makes 12 muffins.
