Banana Pecan Muffins

2 cup all purpose flour 

1 tbsp baking powder

1/2 tsp salt

1/2 cup chopped pecans or walnuts

1/2 cup vegetable shortening

1 cup sugar

2 eggs

1 1/2 cup mashed ripe bananas, about 3

Preheat oven to 400F. Blend together flour, baking powder and salt

in a mixing bowl. Mix in the chopped nuts. In a second bowl, cream

the shortening (I used lower fat margarine, applesauce would probably

work very well in these, although it would make them more dense)

and sugar together until light and fluffy. Add the eggs one at a

time and beat well. Blend in the mashed banana. Add the wet

ingredients to the dry, stirring just enough to moisten, about 20

seconds. Spoon the muffin batter into a greased muffin tin and bake

for 20-25 minutes until the muffins are golden brown and the tops

spring back when touched.
