Blueberry Muffins

2 cup all purpose flour

1/2 cup sugar

3 tsp baking powder

1/2 tsp salt

1 cup fresh or frozen blueberries

1 tsp grated lemon or orange peel

3/4 cup milk

1/3 cup oil

1 egg, beaten

Heat oven to 400. Grease bottom only of 12 muffin cups or line with

paper baking cups. In medium bowl combine; flour, sugar, baking

powder, salt, blueberries, and peel; Mix well. In a small bowl

combine milk, oil, and egg. Blend well. Add to dry ingredients all

at once; stir just until dry ingredients are moistened. Fill prepared

muffin cups 2/3 full. Bake at 400 for 18 - 22 minutes or until

light golden brown. Cool 1 minute before removing from pan. Serve

warm.
