Low Fat Blueberry Muffins

2 cups wholemeal flour

1/4 cup sugar substitute

2 teaspoons baking powder

1/2 teaspoon cinnamon

1/4 teaspoon mixed spice

1 egg white

1 1/2 cups skim milk

9 teaspoons apple sauce

1 cup frozen blueberries

Preheat oven to 190 (C). Spray a 12 cup muffin pan with canola

spray. In a mixing bowl, sift flour with sugar substitute, baking

powder and spices. Set aside. In a small bowl, whisk together egg

white, milk, and applesauce. Add mix to flour, stir until just

combined. Fold in blueberries. Divide between muffin cups, bake

about 15 - 20 minutes. Place pan on a wire rack for 5 minutes,

loosen muffins with the handle of a metal teaspoon and cool on

rack.
