Brownie Muffins
makes 121/2 cup soft butter
1 square bittersweet chocolate, melted
1/2 cup sugar
2 egg
2 tsp baking powder
2 cup flour
1/4 cup cocoa
1/2 cup milk
1 tsp vanilla
1/2 cup chocolate chips
1/2 cup chopped walnuts
Preheat oven to 400 degrees F. Combine butter and chocolate. Beat
in sugar until well combined. (These muffins seem to contradict
the rule that you are not supposed to overbeat muffins.) Add
eggs, one at a time, beating after each addition. Mix flour, cocoa,
and baking powder together, then add to butter and egg mixture,
alternating with the milk, beating after each addition. (If using
a hand-held electric beater you may find that eventually you have
to switch to using a spoon.) Mix in vanilla. Fold in chocolate
chips and walnuts. Line the cups of a muffin tin with paper cupcake
liners, and fill the cups 3/4 full. Bake 25-35 minutes.
