2 1/2 c. flour1/2 tsp. salt
1 1/4 tsp soda
3/4 tsp baking powder
2 c. buttermilk
2 eggs separated
3 tbs melted butter
Sift dry ingredients. Beat egg yolks and add to milk. Combine
with dry ingredients, add melted butter. Fold in beaten egg whites
and fry in aebleskiver pan.
Make sure pan is well seasoned. Brush wells with bacon drippings
before each batch. Maintain an even heat. Fill wells until they
almost reach the top. When batter begins to bubble, use a thin,
sharp tool like a turkey lacer (toothpicks are a bit too short)
and turn the aebelskiver over quickly in the pan. They will burn
quickly, so you much watch them carefully.
Sprinkle with powdered sugar and serve with raspberry jam.
