Belgian Waffles
2 cups all purpose flour2 tsp baking powder
1 tsp salt
2 to 3 Tbsp sugar
2 cups milk
2 eggs, separated
Sift dry ingredients together in a bowl. Add egg yolks and milk to
the dry ingredients and beat together thoroughly. I find a whisk
works best. Beat egg whites until stiff peaks form. Stir 1/4 of
the egg whites into the batter to lighten it, then gently fold in
the rest.
For each waffle: pour a scant 1/2 cup of batter for each waffle
onto the iron. Bake as directed with your waffle iron.
