Sourdough English Muffins

1/2 c sourdough starter

1 tb sugar

1/2 ts baking soda

1 c milk

2 3/4 c bread flour

3/4 ts salt

cornmeal

In large mixing bowl, combine starter, milk, 2 C flour. Cover and

let sit at room temp for 8 hours. Mix 1/2 C flour, sugar, salt

and soda and sprinkle over dough. Mix well. Turn out on floured

board (use 1/4 C flour) and knead 3 min. Roll out to 3/4 in

thickness. Use 3 in cutter or tuna can and cut muffins. Place 1

in apart on cookie sheet Cover with towel and let rise an hour.

Sprinkle both sides with corn meal and bake at 300 in lightly

greased electric frypan with cover on for 10 min on each side.
