Banana Nut Bread
(1 loaf, but can be used for muffins)1 3/4 cups sifted flour
2 teaspoons baking powder
1/4 teaspoon soda
1/3 cup shortening
2/3 cup sugar
2 eggs, well-beaten
1 cup mashed ripe bananas (2-3 bananas)
1/2 cup coarsely broken nut meats (walnuts)
Preheat oven to moderate (350 degrees F) Sift together the flour,
baking powder, soda and salt Cream the shortening, add the sugar
gradually anmd continue working until light and fluffy. Add the
eggs and beat well. Add the flower mixture alternately with the
bananas and nuts, a small amount at a time, beating after each
addition until smooth. Fill muffin pan cups about 2/3 full. Bake
about 20 minutes or until golden brown. Loosen with spatula; remove
from pan; cool on wire racks.
