BANANA LOAF

500 ml whole wheat flour

10 ml baking powder

1 ml baking soda

2 ml salt

5 ml ground cinnamon

125 g butter

250 ml brown sugar

2 eggs

4 large, ripe bananas, mashed

125 ml chopped walnuts (optional)

2 ml vanilla extract

Sift flour with baking powder, baking soda, salt and cinnamon.

Cream butter and brown sugar until light. Add eggs individually,

beating well between additions and adding 5ml of the flour mixture

with each egg. Add four mixture to creamed mixture alternately with

bananas, beating well until smooth. Stir in nuts (optional) and

vanilla. Pour into lightly oiled and base-lined 26 x 9 x 7cm loaf

tin. Bake at 180C for 50 to 60 minutes.
