Banana Nut Bread
(makes two 8 x 4 x 2-inch loaves)2 1/2 cups flour
1 teaspoon salt
2 teaspoons baking soda
1 cup vegetable shortening
2 cups sugar
2 cups mashed ripe banana (about 6 medium-size bananas)
4 eggs, slightly beaten
1 cup chopped walnuts
Preheat the oven to 350. Grease and flour the loaf pan. Stir and
toss together the flour, salt, and baking soda. In a large bowl,
mix the shortening, sugar, mashed banana, eggs, and walnuts. Add
the combined dry ingredients and stir just until the batter is
thoroughly blended. Pour into the prepared pan and bake for about
65 to 70 minutes, or until a broom straw or skewer inserted in the
center of the bread comes out clean. Remove from the oven, and
let cool in the pan for about 5 minutes, then turn out onto a rack
to cool completely.
Whole Wheat Banana Bread. Substitute 2 1/4 cups whole-wheat flour
for the 2 1/2 cups all-purpose flour.
