Bannock

3 cups flour

1 tsp salt

2 Tbsp baking powder

1 Tbsp sugar

2 Tbsp lard

3 cups cold water

Mix the flour, salt, baking powder, sugar and lard. Stir in enough

cold water to make a thick batter that will pour. Combine quickly

until smooth and pour at once into a greased baking pan. Fill the

pan to half-full. Bake in a 400 F oven for 35-45 minutes. Serve

with butter and honey or a wild berry jam.

Bannock will not dry up or become mouldy and will keep longer than

yeast bread.
