Subject: pale ale butter-batter bread

Beer Cheese Bread
3 c bread flour2 tbsp sugar
1 tbsp baking powder
1 tbsp debittered brewer`s yeast to enhance flavour
2 tbsp melted butter
1/2 tsp salt
1 1/2 c pale ale
1 1/2 c coarsely grated aged cheddar cheese, divided
1/4 c white onion, finely chopped
In a large bowl, combine flour, baking powder, brewer`s yeast, and
salt. Make a well in centre of dry ingredients and pour in pale
ale, stir just until dry ingredients are moistened. Remove 1/3 c
of the cheese and 1 tbsp of the onion and set aside. Stir the
remaining cheese and onion into the batter. Spoon batter into
greased 8 x 4 inch loaf pan. Pour butter and remaining cheese and
onions over top.
Bake at 350 F for 45 to 50 minutes or until cake tester inserted
into centre comes out clean. Sprinkle reserved 1/3 c of cheese over
bread and bake an additional 2 minutes or until cheese has melted.
Remove bread from oven and let cool in pan on rack for 15 minutes.
Remove bread from pan and place on rack to cool completely.
