Brunch Casserole 04
Ham and Chive Brunch Casserole
1/2 c chopped onion
1 t butter
5 oz shredded ham
1 medium tomato, chopped
2 c biscuit mix
1/2 c water
1 c shredded Swiss cheese
2 eggs
1/4 c milk
1/4 t dillweed
1/4 t salt
1/8 t pepper
3 t minced chives
In a skillet, saute onion in butter until tender. Stir in ham and
tomato. Set aside. In a bowl, combine biscuit mix and water. Mix
well. Press onto bottom and 1/2" up sides of a greased 13x9" baking
dish.
Spread ham mixture over the crust. Sprinkle with cheese. In a bowl,
beat eggs, milk, dill, salt and pepper. Pour over cheese. Sprinkle
with chives. Bake, uncovered, at 350 degrees for 25-30 minutes or
until knife inserted near center comes out clean.
Recipe can be doubled.
