Fluffy Omelet
No-Fail Fluffy Omelet
3 eggs
2 tablespoons warm water
1 tablespoon butter or margarine
Your favorite fillings
In a small bowl, mix together eggs and water. In a medium nonstick
skillet, heat butter or margarine over medium-high heat. Pour in
the egg mixture and, using a spatula, push the cooked egg from the
edge into the center, tilting the pan so the uncooked egg fills in
around the edge. While the top is still a little moist, sprinkle
on the fillings. When eggs are set, fold omelet in half and slide
it onto a serving plate. Serve immediately.
FILLINGS:
Bacon, ham, sausage, cheese, bell peppers, mushrooms, tomatoes, onions
NEW FILLING IDEAS:
Chinese leftovers, such as broccoli in garlic sauce
Already cooked vegetables, such as broccoli, peas, or corn
Scalloped potatoes---and top omelet with ketchup
Any leftover meat, such as steak, chicken, or pork, meat loaf, or
meatballs, all sliced or crumbled into bite-size pieces
Chunky applesauce and cheddar cheese
Smoked salmon, green onions, and cream cheese
Crushed butter crackers or pretzels
Brie cheese, avocado, and alfalfa sprouts
Canned shrimp or canned crabmeat
Spicy black beans, rice, and salsa
