Cajun Spice 03
Cajun seasoning salt
1/2 lb salt
1/2 oz Chili powder
1 1/4 oz whole black pepper
1/3 oz whole white pepper
3/4 oz granulated onion
1 1/4 oz granulated garlic
2/3 oz paprika
3/4 oz cumin
2/3 oz fennel
1/2 oz celery seed
1/3 oz dried thyme
Place all ingredients into blender. mix until even consistency.
To blacken meat with this, mix into a 'paste' with clarified butter,
or olive oil. coat meat with paste and place on VERY hot cooking
surface.
