ECONOMICAL CHOCOLATE CAKE

75g butter

3/4 cup sugar

1 egg

1 Tbs golden syrup

1 tsp vanilla

1/2 tsp baking soda

1/2 cup milk

1 1/2 cups flour

3 Tbs cocoa

pinch salt

Grease and flour a 30x20cm sponge roll tin. Cream butter and sugar

until light and fluffy. Add egg and beat thoroughly. Stir in

golden syrup and vanilla. Dissolve baking soda in milk. Sift dry

ingredients and stir into the butter mixture alternately with milk.

Mix well. Pour into prepared tin and spread evenly. Bake at 180

- 190 C for 30 - 35 minutes. Turn on rack to cool. Ice with

chocolate icing and sprinkle with coconut or chopped walnuts.
