Chocolate Cake

115 g (2/3 cup) raw cane sugar

4 teaspoons cocoa or carob powder

1/2 teaspoon sea salt

170 g (1 1/2 cup) white or wholewheat flour

3/4 teaspoon baking soda

90 ml (1/3 cup) vegetable oil

1 teaspoon vanilla essence

2 teaspoon cider or wine vinegar

200 ml (3/4 cup) cold water

Mix sugar, cocoa, salt, flour and soda. Add oil, vanilla essence,

vinegar and water. Just mix, don't beat. Pour into two greased

tins. Bake at 350F/180C for approx. 30 mins.
