BASIC UNCOOKED BUTTERCREME FROSTING

3 egg yolks

1/4 cup powdered sugar

1 teaspoon vanilla

1 stick butter softened

1 stick butter chilled

Put first 3 ingredients in electric blender and blend until well

mixed. Add softened butter a little at a time to blend. Then

blend in the firm butter a little at a time until creamy and thick.

Variations:

Before adding butter add 1 square melted and cooled unsweetened

chocolate or 1 teaspoon instant coffee or both.
