Royal Icing

There are two forms of royal icing - one used for just for decorating,

the other used as 'cement' for glueing your gingerbread house

together.

Decorating Royal Icing

1 egg white, beaten (soft peaks)

6-8 oz. powdered sugar

add sugar to egg whites until it reaches desired consistancy.

Royal Icing Cement

3 Tb. meringue powder

3 1/2 fluid oz warm water

1 lb. powdered sugar (sifted)

1/2 tsp. cream of tartar

Beat the meringue powder and water together. Stir in sugar and

cream of tartar, Beat vigorously for 3 - 4 minutes.

This dries rather quickly and very hard. Cover the container with

a damn paper towel when you aren't using it.
