Buckeyes (Chocolate/Peanut Butter Balls)

2 c peanut butter

1 c margarine

1 1/2 lbs powdered sugar

12 oz chocolate chips

1/3 paraffin wax

Mix peanut butter and margarine well. Add powder sugar and set

aside in refrigerator for a few minutes while you prepare the

chocolate. Melt paraffin in microwave, add chocolate chips and

heat gently, stirring until melted. To keep the chocolate from

getting too thick, place bowl over extremely hot water or a double

boiler.

Dip balls (I find using the two-fork method works best as this

allows the chocolate to drip in bowl) into chocolate and place on

wax paper. Cool until chocolate sets.

NOTES: This is a Christmas favorite to add to your cookie/candy

tray if you haven't already. The chocolate balls may be made with

plain/crunchy peanut butter and any brand (even generic) will do.

Finding the paraffin in the stores can be tricky, however, once

you purchase a box it will last a very long time and it's inexpensive.
