Angelica

Here is a recipe for preserved angelica. I haven't tried it myself, but

a friend from Greenland told me it would work. Angelica is national

flower of Greenland and the young uncooked stalks is chewed on as a

"candy".

I'm afraid it's not a very precise recipe:

Use young stalks/leaf stems cut into smaller pieces. Boil until tender.

Remove outer lay of skin (throw away),

boil again until the stalks become green. Dry them og weigh them.

Sprinkel the same amount of sugar over the stalks.

Leave for 2 days. Boil the stalks/succer mixture a couple of min. and

drinse the angelica. Sprinkel the angelica with the same amount of sugar

again and boil for 10 min. Put the angelica on a stack in a DRY and AIRY

space, until they're dry. Keep them in a box.
