Texas-style Baked Potato Casserole

Yield: 8 servings

6 large potatoes

1/2 cup butter

1 cup Monterrey Jack cheese, grated

1/4 cup bacon bits

salt

pepper

1 can enchilada sauce

1 can Wolf Brand Chili with beans

6 green onion tops

1/4 cup jalapeno slices

Boil, bake, or microwave the potatoes. Cut potatoes in half and

arrange in a large casserole dish, leaving skins on potatoes.

Press down with a fork.

Spread butter over potatoes. Spread bacon bits over butter. Add

salt and pepper.

Spread grated cheese over top. Spread enchilada sauce and chili

over top.

Bake until hot and cheese is melted. Garnish with jalapenos and

chopped green onion tops.
