Brunswick Stew
This recipe makes a lot but it is great is freeze in individual containersand pull out as wanted and heat in microwave.
1 5lb. hen ( or could use just chicken breast if preferred)
1 qt. water
5 potatoes, cubed
1 medium onion,chopped
2 (#2cans=2 1/2 cups or 20 oz ) tomatoes
1 can (6oz) tomato paste
1 can tomato soup
juice of one lemon (or can substitute 3 Tbsp. lemon juice)
1 can tiny lima beans
1 can corn ( may use 2 cups frozen corn)
1 tablespoon each: sugar, salt, pepper, worcestershire
Cook hen in water in pressure cooker until tender. Remove bones and cut
into small pieces. Pour broth from cooking chicken into larger pot (dutch
oven) and add potatoes, onion and tomatoes. Cook until tender then mash
with potato masher. Add chicken, soup, tomato paste, and lemon juice. Cook
ingredients until they begin to thicken. Add limas, salt, pepper, sugar,
worcestershire and continue cooking. Add corn last and cook until mixture
thickens, stirring often to prevent sticking. Serve at once or store in
containers in freezer.
