MIDWESTERN BUTTER BEAN CHILI
serves 4-61 pound ground pork
1 cup chopped onion
2 - 3 cloves garlic,minced
16 oz can tomatoes,cut up
16 oz can butter beans or lima beans, drained
8 oz can tomato sauce
two 4oz can green chili peppers, rinsed, seeded and chopped
1 tablespoon chili powder
1/2 teaspoon sugar
1/2 teaspoon dried basil,crushed
1/4 teaspoon ground allspice
1/4 teaspoon black pepper
1/8 teaspoon ground red cayenne pepper
In a large skillet or a saucepan cook pork, onion, garlic till meat is
brown and onion is tender, drain off fat. Stir in UNdrained tomatoes,
drained butter beans or lima beans, tomato sauce, chopped chili peppers,
Chili powder, sugar, salt, basil, allspice, black pepper and red pepper.
Bring mixture to boiling. Reduce heat. Cover and simmer for 30 minutes. If
desired, serve with toppings suggested below Suggested toppings: crushed
crackers, shredded cheese, chopped carrot, sour cream, shredded lettuce,
chopped onion, alfalfa sprouts and chopped fresh tomato.
