Cincinnati Chili

Serves 12

3 1/2 pounds lean ground beef

1/2 onion

2 1/2 T rendered bacon fat

1/2 t finely minced garlic

1 12 t Greek oregano

1 t cumin

1/2 t black pepper

3/4 t nutmeg

1 t cinnamon

1/2 t chili powder

3/4 t chili pequins, whole dried, crumble (to taste, these are hot)

1/2 t thyme

1 quart water

1 oz beef flavor base

1 bay leaf

1 oz coca

4 t vinegar

5 t allspice

2 t Worcestershire sauce.

Saute onion in bacon drippings. Add meat and brown, strain off fat,

blen in remaining ing. Add more water as needed. Simmer 3 hours or

use crockpot and cook all day.

Serve over thin spaghetti. Sides are finely shredded sharp cheddar

cheese (I use Cracker Barrel when I'm flush), red beans, chopped

green onions, and oyster crackers. Any or all can be added.

When I went back to Cincinnati a few years ago and tried the REAL

thing again, this tasted just like it.
