Green Chile Stew
3 lb lamb stew cut into 1 inch cubes1 cup onion, chopped
3 cloves garlic minced
2 Tbsp oil
2 cup chicken broth
1 tsp salt
1 tsp juniper berries; Crushed
3/4 tsp pepper
1 Tbsp flour or masa
3 Tbsp cup water
5 green chilies, peeled, seeded and chopped
lemon zest from 2 lemons
Brown lamb with onion and garlic in oil large stew pot until lamb
is no longer pink. Drain off fat. Stir in broth, salt, juniper
berries and pepper. Heat to boiling.. Reduce to simmer and cover.
Simmer, stirring occasionally, until lamb is tender, about 1 hour.
Stir in chilies. Shake flour and water in a tightly covered container;
stir into lamb mixture. Cook until thickened Serve with a litte
lemon zest sprinkles on the top.
