Self -Frosting Anise Cookie
2 1/4 cups sifted flour1/2 teaspoon baking power
1/4 teasspoon salt
4 eggs
2 cups sugar
1/2 teaspoon anise extract
Sift flour, baking powder and salt together several times. Beat eggs at low
speed of mixer until frothy; turn mixer to a medium speed; beat 10 minutes
longer. Beat in 1 tablespoonful of sugar at a time; this takes about 5
minutes. Turn mixer to a low speed; add sifted dry ingredients slowly; beat
15 minutes longer; blend in anise. Drop from teaspoon on to 5 or 6 greased
cooky sheets. Work quickly. Allow to stand in a cool place several hours
or over night; the top of the cookie should be dry to the touch. Bake at
325 F about 14 minutes. Makes about 12 dozen.
