Subject: Authentic Benne Wafers

Benne Cookies
1 c benne (sesame) seeds1 1/2 sticks butter, melted
1 1/2 packed light brown sugar
1 1/4 cake flour
1/4 t baking powder
1/4 t salt
1 teaspoon pure vanilla
1 large egg
Preheat the oven to 300F. Toast the benne seeds on a baking sheet
till golden, 10 mintues or so. Remove from the oven and increase
the heat to 325F.
In a large mixing bowl, combine all the ingredients and mix thoroughly
with a wooden spoon. Drop the first batch of batter by .5 teaspoons
onto a well greased aluminum foil lined cookie sheet about 1.5
inches apart and bake till evenly brown. (If pale and puffy they
are not ready. 15-20 minutes, watching constantly to avoid burning.
Remove from the oven, allow the cookies to cool a few minutes,
carefully peel them from the foil and cool on a rack.
Yield: About 75 cookies.
