Cheese/Cornmeal Crackers
2 cups shredded cheddar cheese (8 ounces)1/2 cup grated parmesan cheese
1/2 cup butter or margarine
1/4 cup skim milk
1 tsp seasoned pepper
1 tsp garlic powder
1 tsp paprika
1 cup old-fashoned oats
1/2 cup all-purpose flour
1/2 cup cornmeal
2 Tbs sesame seeds
Let cheeses and butter come to room temperature, then combine them
with the milk, pepper, garlic powder, and paprika in a mixing bowl.
MIx in remaining ingredients.
Shape dough into a 12-inch roll. Wrap tightly with plastic wrap and
place in refrigerator a minimum of four hours, overnight is better.
Spray cookie sheet with cooking spray, or line with parchment. Slice
dough very thinly, about 1/8 inch, and place slices evenly on cookie
sheet.
Bake at 400 degrees F until crisp, about 8-10 minutes.
About 7 dozen.
Note: I whirled the oatmeal in my blender to make an oat flour before
adding it to the mixture.
