Apple Bars
Crust:2 1/2 cup flour 1 cup shortening
1 tsp. salt 1 egg, separated
1 TB sugar milk
Combine flour, salt, and sugar. Cut in shortening. Put egg yolk in a
measuring cup and add milk to make 2/3 cup. (Set aside egg white for
later.) Add this to the shortening mix and shape into a ball. Divide
dough in half and roll out half of the dough. Put in an ungreased jelly
roll pan. Top with filling.
Filling:
5 cups thinly sliced apples 1 1/2 cup sugar
1 TB cinnamon 2/3 cup corn flake crumbs
Roll out other half of dough and put on top of filling. Pinch all edges
together. Beat egg white slightly and brush it on the top crust. Bake at
350 until you are sure the apples are done (35 minutes?) and crust is
golden. Glaze while hot.
Glaze:
1 cup powdered sugar Water to thin
1 TB lemon juice
Mix well and drizzle over bars as soon as they come from oven. With the
back of a spoon, lightly spread the glaze to coat evenly.
