CINNAMON-SUGAR BISCOTTI
2 c flour1 1/2 t ground cinnamon
1 t baking powder
1/4 t salt
1 c sugar
6 T butter (room temperature)
1 large egg
1 egg yolk
1 t vanilla
1 egg, beaten
3 T sugar
1 t cinnamon
Line baking sheet with parchment paper. Mix flour, 1 1/2 t cinnamon,
baking powder and salt in medium bowl.
Beat 1 c sugar and the butter in large bowl until fluffy. Add 1
egg and beat well. Beat in egg yolk and vanilla, then dry ingredients.
Transfer dough to work area and divide in half. Shape each into
9" long by 1 1/2 " wide logs.
Place logs on baking sheet 3" apart. Brush tops with beaten egg.
Bake at 325 F until golden and firm to touch, about 50 mins. Cool
on rack.
Using a serrated knife cut logs into 1/2" wide diagonal slices.
Place each cut side down on baking sheet. Sprinkle with combined
1 t cinnamon and 3 T sugar. Bake at 325 F for 20 mins until golden.
Cool on racks. Makes about 40 cookies.
