Bran Cream Rusks
2 lbs (1 kg) Self raising flour8 cups bran
2 cups white sugar
1 tsp salt
1 lb ( 500 g ) margarine / butter
4 cups cream ( or + cream + ideal milk )
Preheat oven to 180C (325F). Butter 2 bread tins.
Mix the flour, bran, sugar, and salt. Rub in the marg / butter so
that it is like crumble. Mix in the cream and mix well. Divide
the dough and press into the pans evenly. Cut into squares.
Bake for 45 mins until cooked and the tops are lightly browned. Up
end carefully on to a wire rack and allow to cool. When cold,
split pieces and allow to dry out at room temp, or put into the
warming drawer and dry them out, checking regularly that they do
not burn. Makes 64 rusks.
