Crockpot Applesauce with Cranberry Juice
10-12 medium apples2 cups cranberry juice (actually, cranberry cocktail I guess it's called)
juice from 1/4 to 1/2 lemon
2 tbsp sugar (or more to taste)
optional: "craisins" (dried sweetened cranberries) or dried cranberries
Wash, core, and chop (but don't peel) the apples. Squirt lemon
juice on them as you chop to keep them from browning. Put them in
crockpot.
Pour cranberry juice and mix in sugar. Set crockpot to high for
the first couple hours, then turn it to low for four to six hours.
Stir occasionally and mush up the apples as they get soft. Taste
and add sugar if it's too tart for you.
If you want to add craisins or dried cranberries, add them about
two hours before the end of cooking. Serve the applejuice warm
(leftovers are good cold or warmed up).
The cranberry juice and apple peels turn this a very pretty pink
color.
