Fried Ice Cream
6 scoops vanilla ice cream1 cup graham crackers, finely crushed
Vanilla Wafer Crumbs
1/4 tsp. ground cinnamon
1 Tbsp. milk
Oil for deep frying
Place ice cream scoops in a pan and cover with foil or plastic
wrap. Freeze until very firm, at least 3 hours. In a small bowl,
combine graham crackers, vanilla wafer crumbs and cinnamon.
Remove ice cream from freezer and quickly roll, one at a time, in
crumb mixture. Put scoops back into freezer until very firm, 1-3
hours. In a small bowl, beat egg and milk until blended. Quickly
roll coated ice cream in egg mixture; then in crumbs again. Return
to freezer; freeze until very firm, 1-3 hours. Heat oil to 375F
(at this temp a 1-inch cube of bread will turn golden brown in 45
seconds). Use a slotted spoon to lower 1 ice cream scoop at a time
into hot oil. Fry until coating begins to brown, 8 to 10 seconds
on each side. Serve immediately.
