Ice Cream Puffs
Serves 61 Qt. vanilla ice cream
4 eggs, well beaten
4 Tbsp flour
1/2 tsp baking powder
3 inches peanut oil in skillet for deep frying
Form 6 ice cream balls with ice cream scoop. Place on wax paper
squares and freeze until hard. Combine eggs, flour, and baking
powder; mix. Coat ice cream balls with this mixture and return to
freezer until very hard.
Just before serving, heat oil to 375 degrees F. Add another coating
of pastry mixture around each ice cream ball. Deep fry balls in
hot oil until pastry covering puffs up. Serve at once.
