Ice Cream Freezer Green Tea Ice Cream
1/3 cup water1/3 cup sugar
1/2 teaspoon mirin (sweet cooking rice wine)
2 teaspoons matcha (powdered green tea)
1/2 cup milk
1/2 cup half and half
combine water and sugar in a small saucepan over low heat, stirring, until
the sugar melts, and simmer the syrup for 5 minutes. Stir in the mirin
and remove from heat. In a separate bowl, mix I tablespoon of the syrup
with the powdered green tea, then add that mixture to the syrup in the saucepan,
and stir until evenly mixed. Add milk and half and half, pour into an
ice cream freezer, and freeze according to manufacturer's instructions.

Green Tea Ice Cream with no Ice Cream Freezer
1/2 cup sugar
1 1/2 cups water
1 Tablespoon green tea powder
few drops green food coloring
1 cup whipping cream, whipped
2 egg whites
2 tablespoons sugar
Boil the sugar and water to make a syrup. In a bowl, mix green tea powder
with syrup, beating well to dissove. Cool. Cover the bowl and freeze
for 3 hours, or until it has frozen to about an inch from the sides of the
bowl. Remove from freezer and beat the mixture to break it up. Return to
the freezer until it has frozen to about an inch from the sides of the bowl,
remove and beat the mixture again. Put it back in the freezer until it is
the consistency of sherbet, then add the whipped whipping cream and mix well.
Add green food color. Freeze for an hour. Beat the egg whites until stiff,
sprinkle in the 2 tablespoons sugar, and beat well. Combine with frozen
tea mixture, and then return the whole thing to the freezer and freeze
until serving time.
