A Very Special Brown Betty
10 medium tart apples, pared, cored, sliced (8 cups)3/4 cup apple juice
1/2 cup raisins
1/2 cup honey
1/4 cup packed brown sugar
3 tblsp all-purpose flour
1 tsp cinnamon
Topping
1/2 cup quick-cooking rolled oats
1/2 cup whole wheat flour
1/2 wheat germ
1/2 cup shelled sunflowr seeds
1/4 honey
4 tblsp butter or margarine, melted
Combine apples with juice, raisins, 1/2 cup honey, brown sugar, flour and
cinnamon in a large bowl. Turn into an 11 by 7 1/2 by 1 1/2 -inch baking
pan. Combine topping ingredients and mix well; spread the topping over
the apple mixture. Bake in a 350 degree oven for 45 to 50 minutes. Makes
8 to 10 servings.
