Bread Pudding

1 loaf French bread (she says tear up - I always cut it up with a knife

until tonight, when the local store was out of french bread, so I bought

the cheapest white bread I could find and tore it up so it wouldn't

clump together too much, as the bread was very doughy- but I've had no

problems in the past)

1 16-ounce can light sliced peaches, drained (we prefer to slice them

into bite sized pieces)

1/2 cup raisins (she called for golden, but the photo showed regular,

and I prefer the color contrast of regular)

2 eggs

2 egg whites (or 1 whole egg, if you prefer)

3/4 cup sugar

12-ounce can evaporated skim milk

2 cups skim milk

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1 teaspoon butter flavoring

1 teaspoon coconut flavoring

1 Tablespoon vanilla

Preheat oven to 350' F.

Place bread cubes in a 3-quart baking dish. (I always spray with Pam

first. I've used a dutch oven when I had to.) Add sliced peaches and

raisins to bread, mixing gently. In a bowl, combine eggs and egg whites

with sugar and mix well. Add evaporated milk, skim milk, spices and

flavorings, and blend well.

Pour egg mixture evenly over bread, and press bread with fork so it will

soak up liquid. Bake for 30 to 40 minutes. May husband showed me to

use a knife near center to test for doneness - if it comes out still

moist, but clean; its done. You can also tell something by how brown it

is. Well, this is rec.food.baking, right? It never was done for me at

the correct time, it always took longer, but loaf sizes vary, the

dryness of the bread varies, etc.

Sauce

2 Tablespoons light margarine (ok - we use real butter!)

2 Tablespoons flour

1/3 cup sugar

1 1/3 cups skim milk

1 Tablespoon rum flavoring

Melt margarine in a small saucepan and add flour and sugar, mixing

well. Add milk, stirring constantly. Cook until mixture comes to a

boil; boil 1 minute. Remove from heat and stir in flavoring. Serve

over hot bread pudding.

Nutritional information per serving:

276 calories, 11 percent fat (3.5 grams), 73 percent carbohydrate, 16

percent protein.
