LOW-FAT BREAD PUDDING
8 slices bread (your choice), cubed2 cups skim milk
8 ounces egg substitute
12 ounces chunky applesauce
1/4 cup sugar
1 tsp. vanilla
1/2 tsp. cinnamon
1/2 cup raisins
Spray a 13"x9"x2" pan with cooking spray. Place bread cubes in pan.
Combine remaining ingredients and mix well. Pour over bread and gently
stir until all cubes are moistened. Cover pan and bake at 350 F. for 30
minutes. Uncover, and bake an additional 30 minutes, or until the top is
lightly browned.
