Pineapple Casserole
1/4 lb. butter, melted1/2 cup sugar
1 tbsp. flour
Salt
2 beaten eggs
1 (20 oz.) can crushed pineapple and juice
5 slices broken bread
Preheat oven to 3250 F.
Mix all ingredients except the bread. Then add the bread. Bake in a 1
quart casserole for 45 minutes or until golden brown.
I think I actually use a larger dish than a 1 quart casserole but I'm
not sure of the capacity.
Also, I have made this casserole substituting 2 1/2 cups of thick
applesauce, unsweetened, for the pineapple. If you try this, add 1/2 tsp.
ground cinnamon to the applesauce. This is a nice side dish to serve with
ham, pork roast, or turkey.
