SPICED BREAD PUDDING
Makes 8 squares 290 kcals per squareWholemeal bread - 300g (11 oz) cut into 2.5 cm (1 inch) chunks
Milk - 300 ml (1/2 pint)
Egg - 1, beaten
Butter - 75g (3 oz), softened
Raisins - 110g (4 oz)
Other dried fruit - 50g (2 oz), e.g. blueberries, cherries, cranberries,=20
chopped apricots
Brown sugar - 110g (4 oz)
Ground cinnamon - 1 tbsp
Grated nutmeg - 1 tbsp
Preheat oven to 190 C / 375 F / Gas 5. In a large bowl, mix the bread and
milk. Leave to soak for 5 minutes. Add the remaining ingredients and mix
well. Press into a greased oblong sandwich tin, approx. 23 cm x 20 cm (9
x 8 inch). Bake for 35-40 minutes. Leave in the tin to cool, then turn
out and cut into squares. Store in the fridge in an airtight container or
in foil and eat within 2 days.
