BREAD PUDDING WITH SAUCE
4 cups hot water3 cups sugar
3 1/3 cups (2 cans) evaporated milk
9 eggs
3/4 cup unsalted melted butter
3/4 cup drained crushed pineapple in syrup
3/4 cup raisins
1 cup dried apricots diced
1 tbs. vanilla
1 tsp. nutmeg
1 lb. day old bread w/crusts removed cut in 1/2" cubes
1 cup sweet coconut (optional)
Boil water. Stir in sugar until dissolved. Whisk in eggs and milk.
Mix in everything else, then add bread cubes and mix until completely
submerged. Let stand 2 hours.
Preheat oven to 350. Spray large pan (14 x 17 or so) with Pam.
Pour mixture into pan. Place in over with baking sheet underneath.
Bake 1 hour or until knife comes out clean.
JACK DANIELS WHISKEY SAUCE
16 oz. light corn syrup
1/2 cup unsalted butter at room temperature
1 tsp. vanilla
1/4 - 1/2 cup Jack Daniels
Bring corn syrup to boil. Let cool a little and whisk in remaining
ingredients. (I used the microwave and it took less than 5 minutes
total).
