Cinnamon Bread Pudding
5 cups cinnamon bread, in 1 inch pieces1/4 cup raisins
1 cup egg substitute
3/4 cups sugar
2 1/2 cups hot skim milk (hydrated non-fat milk works too)
Heat the oven to 375 degrees. Spray a 3-quart baking dish with
cooking spray. Combine the bread and raisins in the baking dish.
Mix the egg substitute and sugar; add the hot milk (careful, don't
cook the eggs). Pour over the bread and raisins and let stand
about 5 minutes. Stir.
Stir gently if you like your bread pudding a little chunky. Smash
it if you like it smoother. Bake 25-35 minutes, or until the liquid
is absorbed and the pudding is set. Serve warm. This is delicious
even if it is a low fat recipe. Substitute french bread for
cinnamon.
