BLACK BEAN DIP
serve this dip with crackers or fresh vegetables2 cups cooked and drained black beans
4 teaspoons low-sodium tomato paste
3 tablespoons water
1 clove garlic, minced
2 teaspoons lime juice
1/2 teaspoon ground cumin
2 green onions, chopped fine
2 tablespoons chopped mild green chilies.
In a food processor or blender, place the black beans, tomato paste, water,
garlic, lime juice and cumin and whirl for 1 minute or until the mixture
forms a smooth paste. Transfer to a medium-sized serving bowl and stir in the
green onions and green chilies, makes 2 cups
variation:
Garlicky White Bean Dip: Prepare as directed, substituting 2 cups cooked and
drained white beans for the black beans. Omit the tomato paste and water and
add 1/2 cup low fat yogurt. Increase the garlic to 2 cloves and omit the
green onions.
