Chopped Chicken Liver
1 onion chopped fine1 pound chicken livers
2 hard boiled eggs
chicken fat
To make chicken fat, render chicken skin (take from the thighs or
legs or any of the yellow fat on a chicken) and cook very slowly
on a med. heat until you have the grease from the skin. Remove the
skin from the pan and discard. Cool the fat left in the pan. Gently
boil the livers until done. Cool. Save some of the broth. Saute 1
onion in some of the fat. Cool. Put all except fat into a food
processor and mix. Slowly add the fat and mix until right consistency
is reached. You may need to add some of the reserved broth from
the livers. Add salt and pepper to taste. Put into a nice serving
bowl or mound on a platter. Serve with additional chopped onions
and chopped hard-boiled egg and crackers.
