Curry-Apricot Dip

Yield: 4 servings

1 t Diet margarine 1 1/2 t Curry powder

1/4 c Minced onion 1 c Diet sour cream

1/2 c Drained canned apricots

Melt margarine in a skillet. Saute' onion in margarine until onion

is transparent. Add apricots and curry powder. Cook 2 to 3 minutes,

mashing apricots with a fork. Cool. Combine apricot mixture and

sour cream in a bowl. Cover bowl and chill in refrigerator for at

least one hour, to let the curry flavor develop. About 135 calories

per serving.
